배추전은 경상도 음식입니다. 식재료도 조리법도 다양하고 화려한 전라도 음식에 비하면 경상도 음식은 대체로 소박합니다. 재료의 산지를 따지지 않아도 될 만큼 유통이 발달했지만 금방 손에 잡히는 식재료로 해 먹는 음식의 전통은 많이 바뀌지 않았습니다. 배추전은 먹을 것 없다는 경상도 음식을 대표합니다 재료는 더할 나위 없이 간단합니다. 배추, 밀가루, 물. 겨우 그 정도의 재료로 만들어도 맛이 날까 싶을 정도입니다. 재료가 그 정도니 만드는 법도 어려울 리 없습니다. 우선 밀가루를 걸쭉하게 물에 개놓습니다. 너무 되직하기도 너무 묽지도 않아야 하는데 어머니는 계량도 하지 않고 감으로만 반죽을 만듭니다. 물과 밀가루의 비율은 몰라도 어느 정도가 적당한지를 잘 알기 때문입니다. 손맛의 시작입니다. 김장하고 남은 배추를 주로 쓰니 배추전은 겨울 음식이라 할 수 있습니다. 배춧잎은 크기가 적당해야 합니다. 팬 위에 올렸을 때 서너장으로 꽉 찰 만한 크기가 되면 좋습니다. 전으로 부치자면 배춧잎이 납작해야 합니다. 배추 밑동의 두꺼운 부분을 칼손잡이로 툭툭 쳐서 깨트립니다. 배추 손질 끝! 팬을 달구고 기름을 적당히 두릅니다. 배추는 밀가루 반죽에 푹 담갔다가 건져내자 마자 팬 위에 올립니다. 아래 위가 엇갈리게 해서 살짝 겹쳐서 올립니다. 서너장 정도면 적당합니다. 빈틈과 가장자리는 밀가루 반죽으로 메웁니다. 숟가락으로 기름을 떠서 가장자리에 둘러줍니다. 배추전의 모양이 어느 정도 잡혀간다 싶으면 뒤집개를 밑으로 쑥 넣어서 재빨리 뒤집습니다. 기름을 조금씩 보충하면서 부칩니다. 밀가루 반죽이 노릇하게 될 정도까지만 익히면 됩니다. 묽은 반죽을 쓰고 배추의 수분 때문에 흔히 말하는 겉바속촉으로 만드는 음식은 아닙니다. 한 눈에 봐도 심심하기 짝이 없습니다. 하지만, 쫄깃하게 익은 밀가루 반죽과 아삭함을 잃지 않은 채 촉촉하고 부드러워진 배추의 은근한 향이 조화로운 음식이 바로 배추전입니다. 경상도말로 배차적이라 카기도 합니다. 양념장에 찍어서 한 입 베어물면 처음에는 뭐 이런 음식이 다 있나 싶다가도 가끔 생각나는 그런 [More]
